Welcome to Mythical Kitchen Picks, the series in which the culinary experts from Mythical Kitchen tell you all about their favorite foods and ingredients! We’re celebrating Uncle Sam(wich) week this week, so we asked the team of Kitcheneers for their favorite sandwich ingredients and sides. Today, Josh Scherer reveals his secret weapon against humdrum sandwiches.
Josh’s Pick: Queen Charlotte’s Bleu Cheese PImento Cheese Royale
Death to boring sandwiches. Life is too short to eat the same mayonnaise, mustard, deli meat, sliced cheese combination that you’ve been having since you were a kid. Rage, rage against the dying of the light and go straight crazy-style with it. Turn a defiant fist to the sky, throw some stuff you’ve never had before between bread, and trust that it will work out. Speaking of trust—you’re going to need a lot of it when it comes to my favorite sandwich ingredient.
Queen Charlotte’s Bleu Cheese Pimento Cheese exists in that liminal space between condiment and cheese, but it doesn’t need to be labeled anything other than Gosh Damn Delicious. It’s a combination of mayonnaise, cream cheese, sharp cheddar, roasted red peppers, and, of course, bleu cheese, and it combines the incredible texture of pimento cheese with that pungent flavor slap coming from… well, mold. It melts super well, so you can throw it into a dank grilled cheese, or you can do what I do and devote a whole day to making a sandwich with fried green tomatoes, dressed arugula, rare steak, and bleu pimento cheese. My god, what a day that was. You should’ve been there.
Queen Charlotte Pimento Cheese was founded in 2014 by Charlotte native John Morgan, who actually got the seed money from winning Jeopardy! He was also instrumental in getting the Charlotte Bobcats—the worst logo and team name in NBA history—to change their name back to the Charlotte Hornets. It’s a classic American success story, really, which is why you should show your support and eat some spreadable cheese.
